How were the aromas chosen?
Editions Jean Lenoir worked closely with Kansas State University’s Sensory Research Center - the same lab that supported development of WCR’s Sensory Lexicon and the Flavor Wheel.
15 of the aromas in the new Nez du Café are completely new formulations. 20 are from the existing Nez du Cafe, and 25 are from other kits in the EJL family.
Extensive in-person workshops and feedback sessions were carried out with industry members, including CQI. The final selection was narrowed down to align with the Sensory Lexicon and provide valuable training tools.
Why 60 aromas?
The new expanded kit focuses on the accuracy of the aromas, rather than having a specific number of references. Olfactory development is not about the number of aromas, but rather training the brain to process sensory input into specific language.
How are the aromas created?
Our process begins with identifying the distinct aromas present in coffee. We then investigate the specific molecules responsible for these aromas, leveraging the expertise of professional flavorists and coffee-tasting specialists.
Our philosophy emphasizes the importance of validating these aromas through the human sense of smell, reflecting how we naturally experience them in the real world, rather than reducing them to abstract chemical compounds.
To ensure precision and authenticity, we collaborate closely with expert perfumers, validate our findings with coffee professionals, and maintain a focus on repeatable and accurate production methods. Depending on the characteristics of each aroma, we utilize different carrier bases. While alcohol-based carriers are employed when necessary, we prioritize alternative solutions whenever feasible. Similarly, we favor natural essences whenever they achieve the desired results.
Why don’t you use dark glass vials?
The vials used are consistent across all Editions Jean Lenoir collections. Some users enjoy engaging with the colors of the contents of our vials as part of their sensory discovery. Additionally, the clear vials have a significantly lighter ecological impact than dark glass.
In the new kit, we have provided paper covers to support blind sensory exercises.
How long do the aromas in the kit last?
The Nez du Cafe kits are guaranteed for 5 years. However, their longevity will be directly affected by how they are stored - ideally in a cool, dark environment, with the bottles tightly sealed - as well as how often they are open and used.
Switching the caps on the vials will have an immediate negative impact on the kits.
How do I register my kit and make a warranty claim?
Each kit includes a warranty card. If you encounter a problem with your kit, contact customer serviced at the email listed on the card so they can diagnose the issue. Be sure to include the serial number of the kit, and contact EJL directly rather than the distributor you may have purchased from.
Can I buy only individual parts of the kit?
No, they only come as a complete kit.
